Vegan pizzas?

Yep. They do take a little getting used to, and I'm certainly not going to try and pretend that pizza with cheese tastes no better than pizza without, because, y'know, it does. Nonetheless, when it's done properly, vegan pizza can be pretty damn fine indeed.

The following things seem to help rather a lot-

A suitably oily base- you need something to make up for all the oil you're missing out on by having no cheese

A good amount of sauce- you need extra flavour, and you need something to hold the toppings on

Some kind of salty topping- sundried tomatoes, or olives, or something similar. adds extra flavour

Pineapple- (if you like that sort of thing). makes up for the dryness of a cheeseless pizza, at least partly

When making my own pizzas, I find that avocado makes a rather good substitute for cheese, but I find that it really doesn't seem to go with the italian-style flavours of a traditional pizza, so I like to make a Mexican-style one, with beans and cornchips and salsa and suchlike.

Despite (when the jealousy of sausage drives me from his comforting sinewy arms) being more a fan of burgers than pizzas, I have £0.02 to add.

Pre-vegan, my favourite was always thin crust with ham, pineapple and pepperoni. Less is more, indeed. And no one's mentioned Turkish pizza! Absolutely divine. Used to get it all the time when in Oz. Minced lamb, peppers, tomato, onion and parsley, with lemon squeezed over the top. And always lovely thin crispy dough.

For vegan pizza, I second the words of the Count. Lots of oil and lots of sauce. And I second or third the Italian vote. When in Italy last year, earning points in vegan heaven by subsisting on a diet of flour and tomatoes (pasta with tomato sauce for one meal, pizza with tomato sauce for the next, then alternate every day for 3 weeks), I had the best pizzas I've ever had (not counting Turkish). I had many many variations on tomato sauce, some with herbs, some with garlic, and when I saw a restaurant where they listed oil as one of the toppings, I knew I was in good hands.

Pizza plug: if yr in Brighton of a Sunday evening, get down to the Eagle for £4.50's worth of pizza excellence. Lots of delish toppings. My choice? Blue cheese, chorizo and sun-dried tomato. Fucking lovely.

Perhaps a bit small, though.

My mate Roger-Larry (Big Baby) used to go in for anchovies, capers, olives and extra mozarella - I love that shit! Salt galore!

There is a very strong anti-deep dish pizza sentiment in this thread. Apparently none of you "thin eaters" have had Uno's deep dish Chicago-style pizza, with mounds of cheese and the tomatoes on top. ON TOP! You see, these tomatoes have nothing to hide, like the tomatoes that other pizza places use, and they feel no need to disguise themselves as sauce and hide under the cover of cheese.

And pineapple on pizza is just plain wrong.

Pineapple can be good on pizza, a bit caramelised in the oven, but only if they advertise it as ananas, so I know it's authentic Italian pineapple, grown and harvested by an elderly Sicilian and prepared for my delectation by his handsome grandson in Soho. Is there another food as romantic as pizza?

toksik is of course quite correct. I'm sure "pizza pie" is charming but it's not pizza: food of the gods! It's pie, or perhaps flan with pizzaesque filling. If you want pie filled with lovely pizza topping goodness, Giuseppe di Lampedusa describes one in The Leopard (therefore called Leopard Pie) but I haven't been able to track down the recipe online and mine's in the Edinburgh flat. Did find a vegetarian version though, that looks very tasty.

Laughing you almost had me sold on eating at Uno's this weekend, why'd you have to ruin it w/ yr anti-pineapple views? i've once been to a place that also puts Mandarin Oranges on the pizza too! it was lovely...
