Either someoens stealing my name or I was REALLY wasted, cause I dont recall starting this thread..

H.K.C.S.R.:In not hogging it. There's plenty here.. I got a 3 carbuoys of wine (which should be bottled, but that takes time and work and I can just siphon from the carbuoys as I need it so whats the point...)and a hell of a lot of beer in the basement.

What's the point? Um, 'cause if your wine's sitting on a thickness of lees, you're wine is gonna get pretty nasty tasting. What kind of wine by the way?

I made 6 gallons of a blueberry melomel over a year ago. I'm *still* working on it.

Um..what the heck is lees?
The carbuoy usually last a month if im the only one drinking from it so it really doesnt have a chance to go bad.

Oh, I guess you aren't making your own wine in that carboy then, huh? Lees = the yeast-carcass-ickies that fall to the bottom once the yeasties have given their lives to turn your juice drink into alcoholic wine (sometimes with bubbles).

It's real mucky muck.

The Apple-Picker: Yes I AM making my own wine in carbouys except here we call 'lees' 'Sediment'. But with a nice filter all is well. Ive been making wine for well over 7 years (estimating here). Its from the kits though, I dont go and squash grapes or anything. I have yet had a wne go off because its been in the carbuoy for too long. Im not fussy..a week or two after brewing and it calls to me. If I wanted fancy-assed wine Id save up for that 1847..this is regular drinking swill.
