I love the things. mm, mm. but the trouble is, you can only get them in cans, or frozen in a veggie mix. I like my stuff fresh, and I like to play with it in the kitchen. but then I realized - I dont know what the hell a water chestnut really is? is it any kinda nut? does it grow in water? can you get it fresh anywhere? what does it look like in its natural, unsliced form? does it exist at all, or is it kinda like spam, made from everything?

Water chestnut (Trapa natans) is an aquatic plant native to Asia. In the Americas, water chestnut is an invasive species known for its aggressive growth habits.

One acre of water chestnut can produce enough seeds to cover 100 acres the following year. With four, hard half-inch spines that are sharp enough to penetrate shoe leather and large enough to keep people off beaches, these seeds are major hazards to water contact recreation. Additionally, water chestnut can wipe out native bay grasses from some areas, prevents nearly all water use where it occurs, creates breeding grounds for mosquitoes, and provides only marginal habitat to native fish and birds.

The Water Chestnut is actually exactly the same as a regular chestnut. They are rare only because they are grown on chestnut trees that are in flooded areas. They are harvested by scuba divers on alternating thursdays through the months of June and July, thus making for a limited supply through the year.

You forgot about the deadly menace posed by the iniquitous Water-Chestnut Wasp. Growing up to six feet in length, the Water-Chestnut Wasp is a breed of wasp that has evolved aquatic habits and a filthy temper.

Which region do the wasps frequent? I used to dive for water chestnuts professionally, and we never had any trouble with them. Though our valley had been flooded by excess heavy water from a nuclear power plant, so maybe the radiation killed off any wasps that may have migrated to our grove. But let me tell you, after scuba-diving for a year in a lead-lined diving suit, I was buff Buff BUFF!
