A Swedish research team has concluded that the heating of carbohydrates causes them to form acrylamide, a probably human carcinogen, in alarming quantities.

Wow. I've suspected for a long time that our bodies really aren't designed to deal with processed foods on a daily basis, but this is just off the scale. I'm turning hunter-gatherer, this is the last straw.

Goddammit. Here I am feeling all glowy about upping my fruit and vegetable intake, and it turns out that eating them in SANDWICHES is going to kill me.

I think the next addition to my exercise regimen will be "chain-smoking unfiltered Marlboros in front of the TV while eating lard from a tub."

a biology teacher of mine refused to toast his bread past a light brown (verry light) because he said that cooking and burning food helped cause cancer. looks like i should have taken him more seriously. remember, and not to sound all earthy, but the more we draw from nature (and exceed nature) the more we will have taken from us in return. example: how common was cancer before we had all sorts of radio waves bouncing through our bodies all the time?

I'll have to agree with most of the people on here: Take the lists of everything that increases the risk of cancer, and you have almost everything in existence.

Result: We Will All Get It. No Matter What. Live it Up. Eat all the goddamn bread you want.

Unfortunately, the article doesn't look like the usual "all things cause cancer" report to me -- the phrases such as "500 times more of the substance than the top level allowed in drinking water" are more alarming than the usual nutritional science flip-flopping that happens in the mainstream news.

everythings gonna kill you, so you might as well enjoy yourself...but it does seem theres a lot more cancer about than there was, could probably name 6 or 7 people i know/have known with cancer and i live in the remotes of the scottish highlands.

mabye there once was less cancer before radio & micro waves etc, but in almost all instances it wouldnt have been diagnosed.

I wouldn't be too worried. If this is true, we have apparently been dying from it throughout history. So it's not a new danger.

The researchers claimed that it may cause up to 700 cases of cancer per year in Sweden. The total number of cancer cases is 45 000. Smoking is very much more dangerous than bread or chips.

And the governmental agency behind the results are not issuing any recommendations so far. The positive aspects of eating food high on carbohydrates may very well outweight the dangers of the acrylamide. So far they've said thing like: "If the children enjoy chips, let them eat it. On the other hand you may choose not to let them.".

They keep claiming that this is a good thing, since we now about the dangers now, and can do something about them. That may just be them wanting higher research grants though...

I read a press release from a US kidney charity (yes, there are such things) yesterday, warning people off high protein/low carb diets cause they fuck up your kidneys. So it all gets a bit difficult, really.

From the research, it looks as if its not so much the carbs that get you as the heat-processing. I'm trying to find out more.

this is true...my aunt warned me about high-protein/low-carb diets as it has a great impact on the kidneys. She works rounds in a dialsys (sp?) unit and has been in the field for quite a while now. When my friend was going to start one, she warned not to keep it up for long. The constant filtering of proteins is a bit much on the organs. Everything in moderation and balanced my friends...
