Seeking cool & interesting Amsterdam coffee shop owners!

Anybody got any recommendations about cool, crazy, oddball or just interesting coffee shop owners in Amsterdam? i'm working for a company that wants to pitch a doco series to A&E network about owners, their business & lives, etc. A family run business would be the holy grail, but any tips welcome.

...according to the Amsterdam Historical Museum, the owner of the Bulldog cafe is interesting. (in the museum they have one of his old stools where he hid drugs back before the days of tolerance). I think the Bulldog was one of the first as well....

Yup. That guy (Henk) will be talking with us. We've actually rustled up ten really cool folks, but I just wanted to shake the tree on various forums to see if I can find that elusive owner whose place maybe is not all that great & recommended in various guides (there are something like 400 shops), but is interesting all the same. Thanks for the tip, though. it's much appreciated.
