so it's about midnight and me and autopilot are playing catch up. yeah! that's right. we missed last tuesday, so we're having pancake wednesday > it's the new black.

anyway, autopilot is whisking the mix as i post this. anyone got any advice as to what toppings we should have based on the previous weeks escepades?

i'm thinking of some peanut butter. whatcha think?

For me, it's not so much what topping is used, but what kind of pancake it is. What ya got: Silver dollar? Buttermilk? Potato? Crepes? Blintzes?

And just a thought: Has anyone ever had pancakes with Nutella? I bet that would be pretty damn tasty....

okay, so after burning(badly) the first few pancakes we decided to take a look at some recipes on the net. and it seems that our ingredients was a little egg-heavy. so we added a little milk and we burned some more - pretty much all the mixture before giving up.

anyway, my marmite on toast rules!

i think the main problem - apart from driver's 'heavy-on-the-protein' mix, was the fact the pan we used for the occasion cost £1. from poundland, if anyone's interested.

Oh, how fun... we never have meals out of order anymore. Always breakfast at breakfast time. Though coincidentally we've just had mung bean pancakes for dinner.

Jam? Pah. Lemon-juice and sugar, every time.

Recipe? One egg, one cup flour, bit over one cup milk. 1:1:1. Increase as needed, and leave the mix to sit for about an hour or so, covered.

As for burning them - maybe use a little less butter in the pan? I found cheap-ass pans better than non-stick ones, actually...

And marmite on toast? [shudder] Has to be Vegemite, I'm afraid...

this may sound gross, but the only way to cook pancakes in a regular frying pan without burning them is by putting a big glop of CRISCO (or the British equiv) in the pan before cooking. the problem is that butter will cook away before even the first batch is done, but crisco will pretty much grease up the pan all morning. (though if you're cooking a lot of pancakes, I suggest adding another glop of crisco half way throug).

Vanilla extract or honey, in the batter.

If you are making fruit pancakes, don't put the fruit in the batter. Drop them in once the bubbles begin to form on the panckes in the griddle.

oh, grenadine syrup is a good addition to the vanilla, especially if you like pink pancakes.

ew man. may I suggest a generous bit of cooking spray stuff instead?

I have to admit to a fondness for chocolate chip pancakes, with melty bits and whipped cream on top.....mmm

No, cook the pancakes in sunflower oil. Not too much, enough to leave the pancake crisp and dark on one side and light and soft on the other side.

As for toppings? Any combination not including maple syrup is a criminal offence. I will let people off if they use Tate & Lyle Golden Syrup.


A grade three or four syrup is favourite, just in case you were wondering.

Butter does burn, but what I do for most sauteeing is put a little butter and a little oil together. It doesn't burn and it tastes better, like butter. So for pancakes probably a little lump of Crisco and a little lump of butter would work the same way, the best of both worlds.

I have a pet peeve regarding syrup. Aunt Jemima, Mrs. Butterworth, any crap that comes in a plastic bottle, or does not need to be refrigerated after opening, is not maple syrup. It's just liquid sugar goo. Camp syrup is the best stuff around me. And don't get me started on store-bought frozen pancakes. ugh.
