Which sephirot is "war"?

None of them. However, you might be thinking of Gevurah, who represents judgement.

I'm still very new to the Kabalah so disclaimers etc.

I could see an alternate answer to "none" begin "all". War is a very big thing with many aspects, the causes, the aims, the political change, the effect on the individual, vilence and compassion, seeking intelligence and spreading lies.

I would approach it by trying to apply the whole tree to war, and see which aspects of war might relate to each sphere.

It's Geburah. War is Geburah, and it should stay in Geburah. It's when people confuse the essence and meaning of War with words like warlike and warring and warriors that we get things like the Tower and full throttle "evil".

Once we transcend Tipherethic individuality, we begin to understand that there are only two ways that things happen on the "we" level: Work and War, Giving and Judging, Chesed and Geburah. Problem is, people think War has to be an agressive masculine activity, and it's not. War is the strategic manipulation of thing to ensure value and meaning.

All spheres below the Supernals exist in duality. So, in a sense, everything below the Abyss is at war.

As to Geburah, it is called Judgement but is more accurately described as Adjustment. It is the karmic balancing of, or giving form to, the force of Chesed, Love. It's severity is due to it's blindness - adjustment occurs in accordance with the Will of the universe, regardless of who gets hurt in the process.

Geburah is probably the closest approximation to embodying the idea of war as it manifests in the material plane, at least in the sense of a struggle of opposites. Note also that the ruling planet of Geburah is Mars.
