Reading about all of this backhandling that goes on (especially in big industries, eg. grant's sugar industry post) makes me wonder what precautions a "future employee" can take to make sure that he not only understands what he agrees (in contract) to but may exercise even a small bit of control in.

Could you say tape your interview either via audio or video or say bring in an outside party (like a lawyer, union rep. or most hopefully otherwise)?

Now something like this to be effective has to be generally accepted or passed into common law where everyone could take advantage of it...not just people who could blow copious amounts of money on legal representation. Also its seems naive that government would stand up for the working man when business obviously pads their wallets...

The last job I had went well, since it was a private biz and we all shared the same common goals. There wasn't any b.s. cause you could look your boss (and friend) in the eyes and find out the real scoop. And when you asked questions, you got straightforward answers. We even had owners rights on the work we did. How can something like this work for others?
